it's awesome, the trick is to pre-bake

not hard at all, just takes a while

I use it all the time in curries! Fry the eggplant in olive oil ( after cutting into small wedges) to cook it a little and seal it with a nice toasty flavour...then dump it in the curry sauce with whatever else you are using and voila!!! ... a delicious rich curry. It is great for bulking up the curry and it absorbs the curry sauce so it carries the curry flavour.

Of course, the above preparation of an eggplant in the manner described, with a bit more cooking, renders said eggplant as a delicious side dish too! :-)

That sounds positively scrumptious. Do you happen to have a recipe for an air biskit? I always seem to flub up the breading part.

Where are the recipes that feature corn? There's times when you don't have a choice but to include corn.

those eggplant recipes are great... it would go just right with something for dessert... like rhubarb for example.

does anyone here eat rhubarb?

if so, what do you do to make it palatable?
