What is the longest safe length of USB cable that can be used for a MIDI controller to a Mac running Ableton Live 10?
I'd like to have this sit by another musician on stage away from my keyboard setup.

You can also get powered extender cables for USB 2.0 up to 20m

For the $20-30 it's worth getting one and testing it out. There are also unpowered extender baluns that use a CAT5/6 cable connection but typically these work at the USB 1.0 speed which is normally fine for a keyboard/mouse or simple MIDI device. Wouldn't recommend either for audio or HDD extender cables tho.

I run one to my controllers which is about 5 metres, but there's a powered hub on the end of it. I'm sure there's probably a latency penalty of a few milliseconds as the electrons make that epic journey but I don't care that much.
