Mac: more cores vs. higher speed...?

so I'm currently working on a iMac Pro, and thinking a few steps ahead about potentially upgrading to a Mac Pro tower, given I tend to use alot of plugins in my projects and max out the CPU rather quickly...

my current machine has 8 cores, and is 3.2gHz. (turbo boost to 4.2gHz).

Mac Pro towers can go up to 28 cores... but only 2.5gHz. (turbo boost to 4.4gHz)

so curious:

- are the extra cores worth the slower speed? or is that of less of an issue as the "turbo boost" would typically compensate?

- would all the extra cores solve the issue of CPU maxing out from lots of plugins in Ableton, even if 20% slower clock speed?

- how/where/when would that difference in speed be most noticeable while working in Ableton?
