I would like to be able to create bezier curve segments in an automation envelope, to help smooth out parameter changes, rather than just having straight line segments.

Any graph editor e.g. in an animation package, offers different kinds of nodes - linear, symmetrical, cusp etc.

Actaully in that second picture, I made a physical device for my drafting class in high school (architecture) that did exactly that. It had joints and fixed lengths per segment that slid along eachother to make a bezier.
