Sometimes your music (especially rhythmic parts) can become really stale and repetitive. By using pitch LFOs, you can add random variations in pitch to make them sound more realistic. I threw together a tutorial explaining this idea through the example of hand drums. Hope this helps!

I'm a big fan of using the S&H for something like this, or for variating the filter on Operator In those cases I can keep the retrigger button on.
I can definitely see though how the LFO can give a track a consistent underlying groove that keeps people's attention.
