could lives quantizing be improved?
always seems to set things more out of sync than when originally recorded

Maybe it's the playing that needs to be improved?
Have you tried changing around the grids/thresholds, etc. in the quantize settings? I found it works more to my liking when I set it to something like 70-80% as opposed to a full 100%.

What latency are you set at for your soundcard? What is the BPM your are playing to? Are you using the metronome at all? Lice 7 or live 8?

Dunno, never used it!.. It puts things on the beat.. nothing to be improved there.

Try turning the quantize to a smaller division of the beat. Like if it's set to quantize 1/8, set it to 1/16 or 1/32 instead. The default is "current grid" which could be a large value depending on what your grid is set at. Pay attention to the smallest divisions of the beat you are using in your playing & it's a good rule of thumb to set it to that.
The larger the division setting and the more your timing is off, the higher likelyhood that individual notes could quantize to the opposite direction (forward or backward in time) as originally intended. At the same time, others might quantize in the correct direction, which would make the timing sound worse. The wider the grid, the more the notes will have to move to the nearest grid line.
Setting the division too low can have kind of have the same effect, like if you have it set to 1/32 and you're only playing 1/16 notes, if your timing is off enough it will shift the note towards the 1/32 line in between the two 1/16 notes.
