If you want to see what the midi-plugs do, then just use two midi channels, one for input, that has all the midi plugs on it. Then you route this into a second channel, where you have your instrument. And record your clips there. E.g. you press note C on your midi controller, this goes through chord-> arpeggiator -> scale, and then routes into the second channel. Here you can record a clip and see wonderfully your arpeggios printed on the piano-roll.

This is how I do it. Nice little trick when you're in a writers block. Throw a little random on it and voila! a little something to work with.
