Afraid to take the cake out of the oven

I have problems in identifying when the cake is fully baked and ready to be taken out the oven so I can put the icing on. Just wondering how many people went through this stage and might want to share how they got over it.

use a toothpick inserted into the center of the cake. if it comes out clean your cake is done.

I buy my cakes from a little bakery around the corner then tell people I made them myself, everybody thinks I'm a pro.

pull it out and put it aside to cool for 3 full days...

have a taste, if it tastes done, its done.

if not? still ok to put it back in the oven

Most recipes tell you how hot the oven should be and how long at what temperature. Even then, there is no guarantee and more times than not it doesn't turn out as expected.
So you see, I tend not to follow the recipes too much. And now I am scared to even remove the cake from the cake-tin :( Most of the time this is where you either make it or break it. :cry:

You see, the problem is not with the mixing it is just to take it out of the oven and the cake tin. If I can do this properly then after that I am fine. Ah mean with the icing and stuff.

The cool down suggestion, as someone else posted, always works for me. However 90% of the times it tells me that it needs more refining....

Only through experience can you truly get a feel for when the cake is ready. You need to do more baking, and eat more cake by professional bakeries. Also consider branching out beyond cakes. Sometimes having some compare/contrast is good when it comes to baking.

...btw, its never done after 3 days cooling

the worst is to assume you cake is done, then when you taste your 3 month old cake, and are like, 'ugh, this tastes like dogdoo, how could i have served this shyte?'

I'm not so sure that's sound advice. There's a world of difference between a cake and a biscuit (for example) and if you muddle the two techniques you end up with a muddy undefined mess.

not sure how to carry on the cake analogy but i upload a private version on to soundcloud and listen to it for about a week, changing bits i dont like. something about seeing it in a different arena other than ableton seems to help as for me the soundcloud version is what people are actually going to listen to. sorry to spoil the "cake" fun.
