Lotsa work and lotsa money. There is a lot of tweaking when it comes to orchestra.

That is a good one to start with plus there's a lot of support behind it. So many people think libraries will sound like the demos out of the box. It takes a lot of work to make them sound good.

They also have an "Instant Orchestra" version for people who don't want to waste time setting up the instruments.
I think they both sound sterile/fake taking into account the demo presentations, but for getting your ideas out, or making demos it probably gets the job done.

The Grand Piano instrument they have is an exception. Jeremy Soule uses that still, supposedly.

I'm so sick and tired of my results trying out with phony sounding synth strings and what not.
Do I actually need to have an actual orchestra and choir to ever make tracks like these?

If not, what are the tools I could look into or is there any place I could learn how to make such authentically?

Nice tracks here. A little research in midi orchestration and music theory will be far more useful than a sample library IMO. I've heard great orchestral pieces from the Reason factory sound bank or the included VSL library from Kontakt. Groove3 do some good tutorials on both these subjects.

Saying that though, as far as these samples go, I would say that he's using the East West "Complete Composers" pack (judging from the orchestral sounds, symphonic choirs and eastern vocal parts).

spot on. two steps from hell (phoenix and bergersen) are the same guys who produce east west sample libraries. those guys are really talented, so getting something even close will take years and years of practice.

if you already know how to read/write music, i'd make this the next step:
http://www.amazon.com/Study-Orchestrati ... 039397572X

and having even some basic libraries at your disposal will go a long way in helping to learn. GPO, kontakt's vsl samples, or east west silver are great starting points.

That's a lot $$$$. Only worth it if you are making some income from it.

Kirk Hunters libraries for Kontakt are affordable. Also EastWest will have a 50% off sale many times a year and their lower priced libraries are great if you don't mind using a dongle.
