I'd start by getting your hands on mp3s of tracks with long instrumental breaks (mo-town are great for that)

I use an old plug-in called iZotope Vinyl to degrade the loops I extract to sound older and more analog, then filter eq it to tweak the sound.

aahhhh I get you-

Have you ever tried out "Vintage Organs" by Native Instruments?

http://www.youtube.com/watch?v=44qjqplaZss

I've compared them directly to a real Baldwin and the sound is tigghttt

EDIT: "Scarbee" has a sample pack called "Vintage Keys" too but I've never tried it out.

i have komplete and that has some vintage organs in it,

but i would need more than just organ sounds really, was thinking about trying to get some old EMU synth sounds
maybe for kontakt, rather than buy any vst just try to get new libraries and patchs,

anyone recommend any for 90's retro house ?

Korg M1 and sampling old 90's tunes will help get you what you are after

any piano will do

808 is good - it has a few sounds which the 909 doesn't

and you got to sneak a mini moog and tb303 in there

roland jupiter samples or you can use prophet from NI

job done

but why?
