What computer to buy

I am looking to get a new computer. This isn't practical but imagine having 20 channels all with separate instances of Kontakt playing anything from abbey road drums to piano all at once, no tracks frozen, with a buffer size at 128 and opening a new midi channel and recording midi over it with no CPU spikes. Kontakt libraries are saved on a separate SSD.

What (if any) Mac set up will support this? Setup meaning, what CPU, Ram, Hard Drive setup

Yes it's not a very intensive project, there are really big ones!

You should reserve 300 - 1200 MBs for each instance regarding the sound bank if you want to have full load on RAM that would be around 16GBs,
as where as you are using a separate SSD lower RAM up to 12 GBs (70%) works smoothly too.

For CPU you'll need quad cores with at least 2.7 GHz Core Clock Speed
