I am trying to route the audio from multiple devices out of just one IOS device.
Doesn't have to be link, I will use what ever app. I just figured link might be able to do this.

Ableton Link doesn't transfer audio or notes, it only syncs Tempo (BPM). I don't use IOS, can't help with the second question, sorry.

Is there anything I could use in conjunction with LINK to route the audio besides physical cabling?

I was hoping to be able to route the IOS link enable devices to a master Ableton instance running on a laptop.
Or at least a single audio output.
Here is an example use case:
My kids use a bunch of link capable apps. They make music while riding in the car. But they have to contend with each other for volume. Would be awesome to get all their apps to route through one output that I could then play through the car speakers. There are a bunch of other applications that I was thinking of... Another would be routing all audio through one device so that headphones could be worn coming out of one device and thus having no sound other than through the headphones.
Does that make any sense?

Here's one way to get mulitple ipads to one output:
