How i can turn them down without loosing quality
Simply turning down the faders for the individual channels (the little black triangles, just like the main volume fader) won't have any effect on quality. That's what those faders are for: how else were you going to mix?
In general, gain staging is important because some effects react differently depending on how hard you "push" them. So you have to think about
where in the chain you turn up the volume to reach the final loudness you want. Do you turn up the volume
before a distortion effect or
after? The final volume may be the same, but in the first case you'll have a more distorted sound and in the second case it will be cleaner. It just depends on what you want.
However, for you, this
only matters if you have any effects on your master channel. If there is, for example, a compressor on your master, it will react differently to lower volume channels coming in: in that case, you may have to lower the threshold on your master compressor. But if your master has no effects, there will be absolutely no change in your sound.
