Lots of practice, check his other videos.
He has a footswitch setup to start playing, record, select new clip, watch his feet. The mpd 16 towards the end is launching clips in Live. Watch the kid beyond video on the Ableton site for more voodoo like this.

Ignore the footswitch, wherever you would mouseclick in Live to get those results, hit MIDI learn and assign footswitches yourself. Do it your own way.
Set Quantise to 'n' measures. (n = 1, 2, 4, 8 )
Arm a track by hitting the track's record button.
First time you launch the clip it records.
Second time you launch the clip it stops recording after 'n' measures and keeps looping.
Send a command to move to the next clip.
Launch the clip to record, once to end recording but keep looping.
So, two buttons, one to launch a clip, one to move to the next clip down. Maybe another to hit play.
Other than that, the tape on the vinyl puts the needle in the groove, they were laid out ahead of time.

From what I can see, two of the three midi controllers are probably a Berhinger FCB1010 foot controller and an M-Audio Trigger Finger.
