So many good recommendations in this thread. Here's a few of mine:
Vertigo – 1958, Bernard Herrmann
Delirious! My favorite score by Bernard Herrmann.
Psycho – 1960, Bernard Herrmann
All strings. A classic.
Solaris - 2002, Cliff Martinez
Really good ambient/mood music featuring tuned-percussion-like sounds.
Valerie And Her Week Of Wonders – 1970, Lubos Fiser & Jan Klusak
Wonderful acoustic music, the perfect match for this uniquely beautiful film.
Carnival Of Souls – 1962, Gene Moore
The ultimate in eerie organ music
Bride Of Frankenstein - 1935, Franz Waxman
Opulent, evocative symphonic score, truly great.
Roots, Rock, Reggae – 1977, various dread artists.
Amazing documentary filmed in Jamaica during Reggae’s golden age. If you love Reggae then this is a must. See Lee ‘Scratch’ Perry working his magic in the Black Ark studio!!!
Werner Herzog movies with soundtracks by Popol Vuh:
Like Hitchcock & Herrmann, another match made in heaven.
Aguirre - 1972
Nosferatu - 1979
Heart Of Glass – 1976
Fitzcaraldo – 1982
The Enigma Of Kaspar Hauser - 1974
Cobra Verde – 1987
Even Dwarfs Started Small - 1970
The Great Ecstasy of Woodcarver Steiner – 1974
Eraserhead – 1977, Alan Splet & David Lynch, with support by organist Fats Waller
One of the most hypnotic moods ever created.
The Shining – 1980, Penderecki, Bartok, Ligeti, & Walter/Wendy Carlos
Dark & brooding, another great Kubrick score. If you like this check out The Exorcist for more fearful music.
The Thing – 1982, Ennio Morricone & an uncredited John Carpenter.
Chilly & chilling, captures a sense of foreboding.
Once Upon A Time In America – 1984, Ennio Morriconne
Just saw this for the first time: wow! Might well be director Sergio Leone & composer Morricone’s best work (director’s cut NOT the butchered cut released in the ever dumbed-down US of A).
Stalker –1979, Eduard Artemyev
I don’t remember this music clearly, but I will never forget the mood I was in after watching this film.

"Let's Get Lost", the Chet Baker documentary is epic.
So is "Straight, No Chaser" about Monk.
I quite liked "Round Midnight" - mid '80's I think drama about expat American jazzbo's starring Dexter Gordon. Herbie Hancock and a lot of other legends are in it.
I have that Soulwax thing in my Netflix queue and can't wait to see it.....

Brothers Of The Head - awesome punk-recreated soundtrack by Clive Langer. And a very good creepy strange film too.
And a definite +1 for La Vie En Rose - awesome performance, awesome music.
Another +1 for Control - great to find that the Joy Division songs were played live by the cast.
And a truly superb film with an absolute belter of a soundtrack is Morvern Callar - Aphex Twin, Lee Scratch Perry, Can, Broadcast...

'30th Century Man' - Scott Walker doc, with footage of him in the studio during the making of his most recent album 'The Drift' (amazingly experimental and inspirational to me.)
'No Directon Home' - Scorsese's Dylan doc
There's a Magic Band DVD I bought when my old band played with them a couple of years ago... can't remember the name off the top of my head. But amazing live footage and a great documentary on there too.
