You know, as someone who used to own a restaurant, you'd think POS keyboards would have occurred to me.
Cherry Keyboards makes a bunch of them. The Cherry RC128B looks really promising, since you can get a kit to customize the keycaps, including bridging them together.

The first one to think of a use for the credit card reader model is my hero.

Mine arrived today and it is GREAT !! You have 4 Layers.
So yours is 64-4 (4 for switching layers) * 4 = 240 buttons !
And you can program single keystrokes or complete shortcuts.
I had two problems:
1) PS/2 to USB adapters do not work for programming, because
the programming software does not find the keyboard
2) You cannot program it with a laptop, because the internal
keyboard interrupts the communication. You have to use a
desktop machine with the normal keyboard BEHIND the programmable
keyboard. But this is only for programming - once done it
works with the laptop like a charm.
