Before I buy tracks from the Apple Music Store, will I be able to convert them to AIFFs for importing into Live? I don't know if the copy protection scheme used by Apple would make this impossible.
Thanks!

You wont be able to convert from a protected file, however, what I do is burn the song on to a cd as an audio cd, and then re-import as a wave (in your case, an AIFF). Some will tell you about the loss of quality in the audio file, but for me, I cant tell.
Regards

Thanks for the CD burning tip! I guess it's a good way to have an off-computer backup, too. I also found a great utility.. JHymn.. that removes Apple's copy protection.

You can also use the free WireTap or Audio Hijack Pro to tap the signal when playing the file in iTunes. Or you could stream it over Jack or Soundflower directly into Live and record it there as any 16 bit format (won't sound better then AAC though)
