Massively happy w/ my Alesis MM FW8 mixer
Just really like the mixer interface form as opposed to a simple "box"
I can EQ my keys / guitars / bass ahead of input and fold-back an efx loop before input into LIVE. Flexibility to use the mixer in a live situation, if needed.
Mic pre's (using Shure beta57a) sound quiet and adequate for my needs

RME FF800.
Rock solid performance. Very flexible routing. Top notch audio.

M-Audio ProjectMix I/O - Quiet and dependable, behaves for me flawlessly in Live, Sonar and Reason!

Art tubefire 8 around $399 on ebay..
really straight forward to use and sounds good. weighs a lot and is big though
has 8 balanced inputs 2 of which are hi-z and 8 balanced outs..

+1 for the alesis io|26. The only thing that concerns me is future driver suport. The last set of driver updates were for last march. Its works fine with vista but I am wondering if it will play ball with Windows 7. Hopefully it will, but alesis are a little slow on the driver updates.

Thanks for all the responses so far!!!
So far I think I'm leaning towards the MOTU Ultralite or an Echo Audiofire 8(around $500 range). Of course, I'd love to get an RME or Apogee but those are way out of my price range for now.
The M-Audio, Alesis, Preonus, Edirol, and T.C. stuff would probably work fine but for a little bit of extra money I think the MOTU or the Echo might be the way to go.
I'm still debating. By no means am I a pro...but I do want everything to sound good and function without issue. Being a Macbook Pro user factors in a little too.
I'm still open to suggestion...

Get a 2nd hand RME Fireface 800. Same sort of money as the other units you mentioned. Much better quality.
