I've read:

- "Mixing Audio" (Roey Izhaki)
- "Mastering Audio: the art and the science (2nd edition)" (Bob Katz)
- "The Mixing Engineer's Handbook (2nd edition)" (Bobby Owsinski)
- "Mixing & Mastering" (Bill Gibson)
- "Son & Enregistrement" (Francis Rumsey & Tim McCormick)

My prefered one is definitely "Mixing Audio", I reread it all the time! :D

An audio DVD full of examples (tracks and mixes) is included, it is very instructive as well and everything is described in details in the book. I'm sure you won't regret your purchase!

My number 2 is "Mastering Audio" which is very technical too and very complementary to "Mixing Audio". By the way, in his book Roey Izhaki is quoting Bob Katz's one and vice versa! They should be sold in a bundle! :mrgreen:
