Oh Sweet Jebus. This works over Bluetooth as well. You don't need a wifi network. I just successfully paired my iPhone to my iPad and it worked perfectly. The sync was totally stable.

You talk about needing wi-fi networks, but isn't it possible to connect the devices by creating a network in the Airport menu on the laptop? Of course if you're only using the mobile devices then the bluetooth is the way to go.
