Many of the answers on this thread are smart ass and not answering the question which I understand perfectly and also am trying to fgure out myself.
The question is: When coming back to the same MIDI song another day, How can you get Live to "remember" the patches selected in the different channels. When I was using SONAR this was done by getting the patch bank/map from SONAR for any keyboard and downloading into the software. With this, SONAR knew what instruments to open of the same song in the next session used.
You definitely probably have to have your Roland in Sequencer mode with 16 channel steup

I don't see what the problem is, there actualy is a 'midi for dummies book
not that you're a dummy, you just need to spend some time learning your instrument, you're obviously hearing the sound that you don't want but it's not coming from Live, it's coming from your fantom, so you need to spend time and learn basic midi and also learn the basic midi portion of your fantom keyboards manual, or get some help from the music shop you bought your fantom from or from roland tech support, cause this is not an ableton Live issue.
regards and hope it works out

Remarks like: READ THE MANUAL don't help at all!
I have studied MIDI for some time as well as keyboard manual and still not sure about all this. If I use VST Iwould definietely get the sounds but those sounds would not be the same as I programed on the keyboard. It looks to me that I need to program the tracks while monitoring through the keyboard not the PC, this way I would hear on note changes etc, but the sound will be generated by internal keyboard sound generator not the PC. Please correct me if I'm wrong, or perhaps there is another way.

i really don't get what is so difficult to understand here....
your keyboard has sounds in it, your computer has sounds in it (via vsti)... midi, as i have explained earlier in this thread, has nothing to do with the actual sounds... essentially it is "note on and off messgaes"....
i think what you need is a soundcard with the ability to monitor an input source in realtime.... like mbox or something similar... so you can plug in the audio out of your keyboard into it.

"LIVE replaces whatever sound comes from the keyboard with ist own internal sounds - this is the only problem. For example I could have strings set on the keyboard and when I connect my headphones to my notebook I can hear piano instead !
How can I fix this ?"
well it seems your hearing the built in synth engine in your soundcard, where are your audio outputs from the keyboard going ?
your keyboard needs the audio outs into your soundcards inputs then activate it in lives audio channel and record "audio" , if you want to change notes/control your keyboard within live then you need to use your keybaord as a sound rack , have your midi channel in live send midi to your keyboard then your keybaords outputs audio to either a mixer or into your soundcards inputs.
before you do any of this make sure its set up correctly in your audio and midi prefs in live...
