From here we'd give the engineer the R/L mix, If they wanted more of anything there are insert points for the channels on the mackie, so they could just plug a cable in to the mixer and they would have that channel coming in to their mixer and could boost or cut the level as they wanted.
I know this is almost 10 years later but thanks for the tips! I've got a similar setup for an upcoming gig, and definitely agree it will probably be easiest to send a straightforward L/R mix to FOH.

I'd love to know a bit more detail on using insert points for giving the sound engineer a bit more control if they wanted it. Not entirely sure if I've fully understood how this works, but could I have a pre-mixed main L/R out from my audio interface, along with a stereo line out for synth, another for beats etc?

That way the sound engineer could turn up the synth line out volume if it was too quiet from off-stage, for example. But wouldn't that just double the amount of synth if it got turned up and added alongside the full L/R mix (and make things sound muddy and weird)?

Hope to still find you out there on the internet somewhere haha!
