I do music/sound to video in Live with a similar machine (with only 4go ram actually), and there's no problem even with 30 mn movies.
And I did so for years with an (now) "old" core2duo.
I think you should go to the applestore and ask them to check your laptop, its behaviour is absolutley not normal.
Maybe your HD or the ram is faulty.

you scare me valiumdupeuple (français par hasard?)... My HD boots the Mac in less than 20 seconds (Momentus XT), I'll try to find a RAM test for MAC

Momentus XT are known to have this kind of issues. There's a lot of chance that you've just point the bad guy. I guess their "fabulous" technology is not really viable yet.
If you have a bootable HD clone on a external HD, try to boot the mac with it and test your live set.

I have done an hour of video with my sets with my old 2006 MBP C2D w/ 3GB of RAM and it worked 100%.
