That's a Rack made of 2 Simplers. Simpler doesn't have aftertouch as source of modulation. You have to right-click the title-bar of both Simplers and convert them to instances of Sampler. On the Samplers you will find Aftertouch modulation on the MIDI tab.
Though now that I think about it, in the Trumpet Solo Legato instrument you only need to tweak the Simpler in the "Sustain" Chain, "Release" would not be affect by aftertouch, I guess.
OBS: In Live modulation works like a percentage of the value in the parameter. So if a parameter is set to 0 it won't modulate anything.

I try to tweak it now, but seems that it is more complex than I expected: the most of the problem I face is the tone color (piano versus forte) which doesn't seem to be available (to switch between). Basically, when you hit hard a pad you get very trumpet forte, and releasing the key (aftertouch) it just diminishes the volume, not switching to the colour of piano. Also, when playing piano, there is a limit to go up with dynamics, a very little, since the sample is just very weak.
Perhaps something to address to Ableton developers, as an idea.
