well, get the cheapest midi keyboard you can find, it will either not be dynamic, or it will be so poor that you won't notice it. on most of the keyboards you have velocity curve that enable you to have constant velocity, like an organ.
then about how early the sound is produced after you press a key, that depends on your latency.

When I said "early" I meant something different: On an organ keyboard you don't have to press a key down fully. Even if you only press it down one millimeter it opens the air valve (a little bit) so that you can hear the sound. Can you see what I mean? It's not latency (which is another very strange organ phenomenon).

I went to Frankfurt/Main yesterday and used the opportunity to test a lot of keyboards at a big music store. Of all the small keyboards I liked the feeling of the novation remote and x-station absolutely best (and got myself a remote 25 now).

Motif ES!!!!!!!!!!! Great action and the best sounds of any hardware synth. For me it is important to have great sounds instantly accessable.
