Upgrade your OS, downgrade your privacy, 'free'
I have a solution...
1.copy the text below into a notepad document
2.name and save the document (eg Windows10.txt) to your desktop
3.rename the document using .bat as the file extension (eg Windows10.txt = Windows10.bat)* to create a batch file
4.right click on the batch file, select 'Run As Administrator'
5.hit any key as instructed when the script gets to the end...
*if you cannot see the file extension browse to and change the following
Start > File Explorer > File > Change Folder & Search Options > View (tab) > (uncheck) Hide Extensions for Known File Types

REM *** Remove Cortana ***
REM Currently MS doesn't allow to uninstall Cortana using the above step claiming it's a required OS component (hah!)
REM We will have to rename the Cortana App folder (add ".bak" to its name), but this can be done only if Cortana is not running.
REM The issue is that when Cortana process (SearchUI) is killed, it respawns very quickly
REM So the following code needs to be quick (and it is) so we can manage to rename the folder
taskkill /F /IM SearchUI.exe
move "%windir%\SystemApps\Microsoft.Windows.Cortana_cw5n1h2txyewy" "%windir%\SystemApps\Microsoft.Windows.Cortana_cw5n1h2txyewy.bak"

If there is anything you want to keep, such as access to your Xbox.. hash it out of the code above and then resave the "Windows10.bat" file... example of hashing it out...
##PowerShell -Command "Get-AppxPackage *xbox* | Remove-AppxPackage"
...or...
::PowerShell -Command "Get-AppxPackage *xbox* | Remove-AppxPackage"
...will work fine. the ## or :: keeps the command from running. you can also delete it.
Note:
1.the Office apps being blocked are the included/built-in version Office apps. If you have a copy of Office that you installed yourself, those will still work fine.
2.you can re-install applications (like Cortana, OneDrive, or Skype) again later if you find you [actually] miss them.
my co-worker and i have run this on our personal machines and several PCs at work with no issues.
**use at your own risk, i make no warranties or guarantees, but i will try and help you resolve if you run into an issue. create a restore point first if fear is stopping you.
