I'm a big fan of Kitchen Confidential,, the book, not the very silly TV Show,, I cooked in NYC for about eight years,, KC is probably the worst book about cooking,, but it is the best book about cooking in NYC. Of all the places i have worked in kitchens in the world NYC is probably the toughest and this book sums it all up perfectly.
