Tough question, I'd be inclined to say Brian Eno but after reading the Wiki above I think the title covers too much ground for me to pick anyone in particular.
Anyone who responsible for bringing a production into existence is by definition a "producer".

Funny & refreshing to see how many people have listed Steve Albini as their favorite producer, thought it was only going to be jeff mills and the lot being mentioned in this thread...
