Just got this but was hoping there is a video out there showing how to use the different options.

anyone know?

No videos that I know of, you just have to make do with the insane manuals.

I found the best way is just to plug it in and have a fiddle with each control, looking at what messages it sends (since you can't manually change the assignments).

They take a while to get to grips with, but they are well worth it.

I also got the LC2 and use it a lot with Ableton, especially to do dj mixes... I never found anything simpler than the crazy manual... but with Ableton it's easy to just program everything... only have to remember that the buttons have different "layers" depending on the light blink position... as with almost all midi controllers.
