FWIW a piano playing friend of mine was ranting about Pianoteq.

a very detailed piano model, it even does sympathetic vibrations, which sampled libraries cannot do. harpsicords? no problem. 30 foot grand piano? no problem.

I tried the pianoteq demo a while ago. It's a really expressive instrument. When being used to emulate a "real" piano I found the bass end and top where very authentic sounding but the middle range still sounded a bit unnatural. The sound board and damper emulation and the sympathetic string resonance is superb. If you layer it with a good sampled piano the overall sound is quite awesome.

I haven't tried my self yet, but i have found that using the EXS package usually works.

I have quickly checked Sonart Yamaha C7 on a PC. I never used Sampler, so I might be missing something. I loaded the programs into the Live library from File Browser, by right clicking and choosing “Load into Library”. I tried some file formats, and here are my first results:
Kontatk 2: there are several programs. I loaded a few, but in all of them the note-off sample is too loud, and playing piano is quite unnatural.
Giga: there is only one program, I don’t know how to change presets.
EXS24: there is only one program, I don’t know how to change presets. Velocity sensitivity is too high. So playing from a master keyboard with a soft touch notes are almost inaudible. Playing from the computer keyboard, with velocity 100, notes are loud enough.
So far I found the Giga version to be the most usable.
