Beat Detective-ish feature

I'd really like to be able to record a live band with their natural feel and tempo (or more accurately, tempi), but then be able to get the tracks aligned to a bar/beat grid with the tempo indicator being updated accordingly. it takes some work, but you can do this in Pro Tools with their Beat Detective feature.
Working to the click from the get-go makes everything so much more sterile and constrained. I'd really like to record the full band, or even just a scratch track to get the feel right, first, then have some way to get it back onto a grid, so that I can easily repeat, delete or copy/paste bars, quantize bits of performances or nudge notes to the beat for better accuracy, etc.
