Is there a way to always start Live with most recent set?

honestly, this is usually a pretty bad idea...
but you could always just save your set, then make one not-so-important change (like..adding an empty clip/track or something) and then force quitting Live. Then, the next time you open like it would say "would you like to re-open this?"
i would personally not do this method...but if there's no other way..

Or just "save as template" in your preferences before you quit your last set each day.

i actually want a reverse of that... going back to opening one audio and one midi track. reinstall does not reset it.. i bet there's a file to delete somewhere...

It's called: create a Live set with one audio and one midi track and then save as template.

open live straight from savedproject.als
that will open live with whatever proj you want to work on straight.
