MIDI Record Overwriting?

Hello - I could use some help figuring something out!
I am trying to acheive the following: record an improvised section (various tracks) on the fly using only my midi controller (easy to do = a scene) then improvise the next section where some of the tracks are replaced with a new part (i.e. bass). All of this needs to happen without touching the computer - just the midi controller with the laptop serving as visual monitor. (I am using an m-audio keystation pro 88 as my controller and so have good control of assignable midi parameters.)
Is this possible? If not a record mode that let's you overwrite a MIDI clip's notes would help here - maybe even as a track level default. Macros would also be a great addition to the product then I could automate the process (any process really) myself and trigger it from MIDI.
