I tried to search but couldn't find anything or the right search terms.

Is it possible to see the VST plugin GUI's from multiple channels at once? For example I use an EQ VST on Audiotrack 1 and another one on Audiotrack 2 but i want to see both GUI's while changing parameters at the same time?

yes there is.
goto live's preferences,disable "auto-hide plugin window"

and enable "multiple plugin windows"

that should do it
