I'm really anal about naming, tagging, and putting artwork on it. I'm starting to think about running them through some app that will normalize them and whatever else. Any recommendations on what OS X app to use for this?

What do you do to all your MP3s?

BTW. Normalizing will not make the songs appear to be at the same volume to your ears - it will only appear to be the case to your peak meter.
