I've got two questions...

1. Is it possible to change a sample's pitch without affecting the speed?
2. I used to be able to click and drag an instrument (sampler, operator) to a channel and it would just put down the raw instrument, but now I have to select an actual preset to get the instrument down, how can I simply click and drag the main instrument? (sorry if that was a bit confusing)

As for instruments like Operator.. That behavior hasn't changed. What Live version are we talking about?
If you have an unassigned midi track; double click on the device browser (to fold all 3 categories), then collapse 'Instruments'. Now you should be able to drag & drop any of those devices onto the midi track which will get you the device in its default state.
Note: A default state which can be altered. So if this approach doesn't give you any default values I'm tempted to say that you changed it somehow.
I'm using live suite 8. I've tried collapsing instruments a bunch, reopening it, and reattempting to click / drag with no luck. I don't believe I've messed with any options that would change this (although it is possible, yet I don't know how I would've done that).
