Change predefined mappings

Hi all,
thinking of buying a controller (M-audio ozone). Does anybody know if you can change the pre-defined assignments of Abletons supported controlers? I guess the ozone is one of them
Let's say I like how they mapped "ping-pong delay" but like to change the mapping for "operator". Would it remember my changes each time I select operator?
