new midi user having lot of trouble with evolution keyboard

hi, i been using live 4 and acid 4 for a while but have never really done much with midi. i'm now trying to learn and have just got an evolution mk425c keyboard.
i'm having a lot of trouble understanding how to assign the fader knobs to different settings like volume control and pan for different tracks in songs that i've made. i click on the midi map thing, assign a fader knob to pan for example but if i try to assign the next one to volume then live says that 'this midi controller is already assigned to pan, would i like to override this assignment?' i dont want to override it as i want to have different track volumes and pans on different fader knobs.
can anyone tell me how to sort this out? is it something to do with live or the keyboard or the settings in my pc? i've downloaded the enigma software but i'm finding it really hard to understand. i think i need to assign different values to the controller knobs or something but i have no idea which values to assign or which presets i should use, if any.
i've asked this question before in the general section but i didnt really get anywhere so i thought i'd start another thread in this problems area.
if anyone can give me some clear simple help and advice for a simpleton such as myself it would be greatly appreciated
