quantizing has to do with MIDI notes, such as you would be recording off an electronic piano keyboard, which are telling a computerized instrument how to play.

you set the "quantization" to a certain resolution, e.g. quarter notes, sixteenth notes, eighth note triplets, etc. and then human "errors" in your playing will be forced onto that resolution, or grid...

warping has to do with audio files. i.e. an actual audio recording, which could be a rendering of that MIDI being played by the computer instrument, or something recorded by a line input or microphone.

to "warp" the audio means to pick certain points in the recording which you want to define as needing to be played at a certain specific point in a strict computerized time line. the warping algorithm uses those defined points to interpolate everything in between.
