new computer time! need advice MBP vs. mac mini vs. ?

okay, so long story short, i now have some money that i didn't realize i had and am going to put it towards a new computer
. i've had my current macbook pro for 5 years now- its a 2.16 GHz Intel Core Duo w/ 2 GB RAM. the thing is, i really don't need a laptop anymore at this point- i'm not dj'ing anymore and don't travel as much as i used to, and my current laptop works fine for whatever i would want to do on the road. i'm not resistant to another laptop, i just don't need it.
so i'm looking at alternative to save some money. my current laptop handles my workflow fine until mixing time- once i get to that point and start adding plugins, side-chain compression, etc., i get hiccups. so i feel like a medium increase in processor speed would fit my needs for now. i'm looking at mac minis to save myself some cash- i can get a 2.66 GHz intel core duo w/ 4 GB of RAM for $700 right now. i'm no computer expert, but the jump from a 2.16 to a 2.66 core duo and 2 GB to 4 GB of RAM doesn't seem like enough to me.
the next level would be a mac book pro, and if i went that route, i'd just spend the extra cash and get a quad-core MBP w/ 4 GB or RAM and a 500 GB 7200-rpm drive ($1900). i know this would be more than enough to suit my needs, but thats $1200 more than the mini option. unfortunately, there's not many options in between. if there were a mini or desktop that met the same specs as the MBP (or even close) for less money, that is the route i would go.
