How do I go about taking out the music or the words of a certain sample, or can you even do that with live?

With great difficulty and a non-unit probability of success, I'm afraid. I take it you want to isolate the vocal? It's going to be difficult to get anywhere near satisfactory results, but you could try finding an instrumental version of the song, or if it's a short sample, an instrumental break in the song where the instruments match what's under the vocal. Then you can run the two tracks side by side, phase invert the instrumental and record/render the output... This should (in theory) remove a lot of the music from your sample through phase cancellation. In practice, it's going to sound poor (most likely), but it's the closest you're likely to get unless you can find an acapella version.

Edit: I should add that this isn't a limitation of Live, rather of audio in general.
