Holding a button decreases/increases value

Hi all,
Probably a dumb question, but I don't know what to search for to find the answer.
In live, is there a way that I can press a button via midi, and for the amount of time I hold it down, It continually decreases at a steady rate, and when I let go of the button it returns to the original value at the same steaday rate (or different rate if possible)? I think I remember seeing it on a youtube video once, yet I can't find it again. Say for example I have a track that's volume is at its lowest volume, yet when I press down the button on my midi controller, it will start to increase at a steady rate to a specific volume and then when I let go it again decreases to the lowest volume!
