I've figured out that Ctrl-clicking the track arm buttons allows me to arm multiple tracks, but when I click any clip record button, recording starts immediately on that clip.

How do I arm multiple tracks and then start multiple clips recording simultaneously?

Right click on scene launch scene

Enable record on scene launch
When you launch a scene all the tracks that record activated with start recording a clip
Remove the stop buttons from the tracks you dont want to record or stop
