can anyone help me get my head around midi controllers?

hi, i got an evolution mk 425c a while ago and i'm using it with live. i'm ok using it with the simpler and the impulse things and i can make and record drum patterns and samples and all that.
i'm just having plenty of trouble understanding midi controllers and maps. for me the instructions that come with the keyboard are really difficult to comprehend. i downloaded the enigma software from their website but i cannot understand that either.
i want to assign knobs and buttons to volume and pan faders in live and use keys to trigger samples and i get so far but then it just says ' would i like to override this assigment?' i know its something to do with reassigning numbers to controllers but i cant sodding well figure it out.
also i've been trying to get the keyboard to play some of the sounds on my soundblaster soundcard and whatever i sound i try to switch it to it always plays that sound mixed with piano. does anyone know what is going on there?
if anyone can give me some simple instructions or point me in the direction of a website or a book so i can get my head round this midi map controller nonsense then i will be forever grateful.
if there's anyone who lives in leeds who fancies giving me a lesson or two then i'll buy you a beer or something
