If, for example, one was bored and at an airport, and did not have access to one's laptop...

... are there some nice sound producing / beat making / baby DAW apps that can run on an IPAD?

Any recommendations would be welcome

Korg Gadget is getting the most use here. I like the sounds and the sequencer is very usable. One of the main reasons I get on with it because it's like a mini Reason. It's not modular like Reason, but it is self contained. Hence, there's no dinking around with connecting a synth up to a daw, syncing things, constantly hooking things up through audiobus, etc. For me that's a plus, for others maybe a minus. Not trying to self promote, but my latest tune was 100% Gadget sounds and about 80% sequenced in Gadget.

There is so much.

A day at the airport simply isn't enough!

Gadget, figure, BeatMaker2, dozens and dozens of good apps for this.

But can you produce an entire song with Samplr?

I use Samplr as an instrument which I will record over to BeatMaker2 using AudioBus or if I'm at home record straight into Live.

You 'could' make an entire track on Samplr but you'd need to be a bit mad.

Tabletop is free. You can create songs with the free dozen music devices it comes with. There are paid devices you can add if you want.

You could make a whole tune in Samplr, but maybe not the traditional way.

i like Figure and triqtraq a lot.

you can also get Fruity Loops for iPad.

Avoid Cubasis, as far as I know you can't import your own samples to create kits. (as far as I know)

RE: Tabletop I think it's a great idea but I didn't like the lack of Timeline Arrangement view. You seem to be locked to 'Scenes'
The DrumMachine is pretty cool though and has some nice stock samples.

Besides those mentioned a ridiculous amount of synths and effects as well:
alchemy, z3ta, cassini, magellan, ituttle, isyn poly and other virsyn, thor, animoog, nave, nanologue, modular, and thats just the synths off the top of my head

Sugarbytes has alot of their effects out there like turnado, wow, effectrix, plus thesys for some midi fun

Personally I agree that gadget might be the best thing around right now though, for an all in one package it really cant be beat. Plus they will be adding more and more gadgets. Theres also rebirth if you feel like getting some old school software recreation going. I also like cubasis but I was never really concerned with the kit import as i can use a builtin kit just for messing around (it may also be possible to import your own Ive just never tried)

Theres also electrify nxt, glitch breaks, and a few others for some loop mangling fun

hell, there's also Garageband.

This is true. But, the absence of arrangement view can be a good thing sometimes

The iPad can be used for more than just production. There is also the ability to use it as a 'performance instrument'. And when you write a piece for performance, it often times leads to great songwriting!
