Anyone know how to convert PDF file to text document?

Certain software like Adobe Acrobat X can do this.

More seriously, reliably converting a PDF to text is actually a fiendishly difficult thing to do - at least where running heads, columns, etc mean that you can't just convert parse the text from top to bottom.
There is a lot of software on the net claiming to be able to do this, but I really struggled to find one that can do this reliably.
I will check on my work computer on Monday & share what I found out about the best packages.
