Help needed! MacBook Pro 2016 vs 2015

Hi i am not sure what to buy,
I am looking for a new computer to continue my music production for the future. My budget is to buy either a 2016 2.7Ghz Quad Core 512GB 16GB AMD Radeon 455 MacBook Pro touch-bar (i tried my friends touch bar and didn't even really like using it, i feel it is a gimmick) or a lovely condition MacBook Pro Retina 2015 with 2.8ghz-4.0ghz Quad Core 16GB 1TB Hard Drive. Cycle count is good at about 55.
What would you guys pick if you had to choose?

I'd choose one of the 2015 models, even as the CPUs of 2016 and later models are of a new generation. The low quality of the keyboard of the 2016 and 2017 models being one reason not wanting these models.
Purely from a performance stand point the 2016 and 2017 models may be faster for music production. You have to weigh all the advantages against the disadvantages for yourself.
Personally I am indeed looking for a 2015 2.8 gHz 15" model with 1 TB of SSD. The only problem it's not much cheaper at all compared to later models. Apple…
I have to make up my mind about if I want one with a dedicated graphics card or not too. The choices will be limited.

I second this. Heck my 2012 i7 MB still does a great job.

...i‘d always go with the latest…no problems with the keyboard (mbp 2016) here…but…atm i‘d wait if they release new models next week…

You mean
announce new models.
The keyboard issues are quite well-known though of course not everyone is affected.
