Help setting up hardware synths with Ableton

Hi,
I'm pretty new to Ableton, i'm running Live 10 Suite and need some help and advice setting up my rig. If anyone can talk me through it i'd be grateful.
I want to set up Ableton (Macbook Pro) so it sequences 2 x hardware synths (Behringer Pro 1 and a Roland JU-10A) that feature both midi and USB, plus one Korg Electribe EM-1 that only features midi. At the start of the chain i have a Keystep connected to my Macbook via USB which i'd like to use to both play the synths and input midi data into Ableton.
I currently have the synths set up using midi only, so...
Ableton/Macbook >> USB >> Keystep >>Midi Out >> Pro 1 >> Midi Thru >> JU-10A >> Midi Thru >> Electribe
Everything is running in sync time-wise and the Keystep is playing the synths and recording midi into Ableton, BUT what i'm struggling to achieve is being able to play each synth independently (both via the Keystep or piano rolls in Ableton) No matter what midi channel i have the Ableton tracks and synths on the Keystep or a piano roll still plays either plays nothing or all synths at the same time. So... somethings going amiss here.
Can anyone talk me through the process from setting this rig up properly from a blank default new project page?
One more question, what is the benefit of connecting the Pro 1 and JU-10a to Ableton via USB rather than Midi via the Keystep given i can't do the same with the Electribe which is Midi only?
