Shortcut for 'FOLD' button in pianoroll?

Is there a shortcut/hotkey for this particular button?

There's no default one, but don't worry:
open your empty default set
create a midi clip
key map the Fold button in the midi clip
delete the midi clip
save the set as your new template set
done! You now have this shortcut available for every new live set.

but i can't use any of the modifier keys on my keyboard with this shortcut

You can't use all modifiers, but you can use some of them (e.g Shift, Alt...)
