Theremin like Midi controllers

Wondering what midi controllers are out there that provide CC message outputs via contactless hand movements like the analogue Theremin does. Reading the posts on ThereminWorld, the Moog Theremini has been getting the thumbs down with latency issues around the 100ms mark, making it unplayable (musically), a shame, from the specs it seemed like a good instrument. I am not interested in an analogue Theremin, where it creates the sound, but hardware devices capable of sending out midi CCs 14bit, so I can feed it to my own crafted digital synthesisers (Max for Live devices). The resolution must be fine enough so no frequency steps are heard, i.e. 14bit, and the latency must be low so it is playable.
After a system with a quick response time and offers the wide range of values. Sure I can use the rotary encoder of my Push2, but is not as fluid as what one would get on a Theremin.
Ideally some DIY or kit system, but with verifiable results of latency, accuracy and noise levels.
Maybe this is not possible, i.e. flooding Max with too many midi CC messages and making it unusable, hence why people still use analogue theremins and just feed the audio signal back to Live.
